Required ngredients

For Rice Bites

  • 1 1/2 cups sushi rice
  • 2 cups water
  • 1 sheet of kombu
  • 3 tablespoons of rice vinegar
  • 1 tablespoon of sugar
  • 1 teaspoon of salt
  • 1 teaspoon of toasted sesame oil

For Spicy Tuna

  • 1 pound sushi-grade ahi tuna, finely chopped
  • 3 tablespoons of Kewpie mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 tablespoon soy sauce
  • 2 teaspoons toasted sesame oil
  • 1 teaspoon lime juice

For Garnishes

  • Thinly sliced avocado
  • Toasted sesame seeds
  • Furikake

How to make

  • To a large, deep bowl, add the rice. Put in cold water, then stir the rice with your hands until the water turns milky white. Remove the rice's water. When you can see rice through 3 inches of water, repeat the process three or four times. Strain the water from the rice. In a small pot, add the rice. Add the kombu and 2 cups water, and stir.
  • Rice should be covered and brought to a boil over high heat, then simmered for about 15 minutes, until the rice is cooked and the water has been absorbed. Remove from heat, cover, and allow it to rest for 5 minutes. Remove and discard the kombu.
  • In the meantime, combine the rice vinegar, sugar, and salt in a big bowl and stir until combined. When there are no more rice lumps, add the rice and stir until fully absorbed. Before handling, allow to cool slightly.
  • Plastic wrap should be used to line an 8x8-inch baking pan. Cover the dish with more plastic wrap after gently pushing the rice into the bottom. Put it in the fridge for at least 1 hour and up to 24 hours.
  • Rice should be taken out of the pan and cut into bite-sized (2x1-inch) rectangles. Heat 3/4 inch of oil to 365°F in a deep, big skillet. With a slotted spoon, carefully add rice squares to the oil in small batches. Cook for approximately 3 minutes on each side, or until crispy and golden. The inside of the bites should still be a little soft and chewy after being removed from the pan and placed on a wire rack over a sheet pan to cool.
  • Mix the tuna, mayonnaise, sriracha, soy sauce, sesame oil, and lime juice until well combined in a medium bowl. Garnish as desired with sliced avocado, furikake, sesame seeds, green onions, and thinly sliced jalapenos. Serve with crispy rice pieces.
